Gourd Zucchini variety
Ingredients:
2 zucchinis (gourds) 2 midsize onions 2 midsize potatoes 1 midsize tomato 2 Tbsp. olive oil 2 ea. fresh onion 2 garlic cloves minced 1 Tsp. turmeric 1 Tsp. coriander 1 Tbsp. garam masala 1 Tsp. cumin seed Green chili pepper (diced) 1 tsp. curry leaves 1 tsp. grinded peppercorn 1 tsp. salt Making: Heat the oil in a stew pan, add cumin seed roast them on medium heat till they pop! Be careful not to burn the seeds. Add diced green chili pepper, followed by chopped onions and keep sauteing. Add chopped potatoes. Add tomatoes keep sauté few more minutes. Add chopped zucchinis. Add coriander, garam masala, turmeric salt and black pepper. Simmer until all vegetable and seasoning cooked and incorporated into each other, for about 20minutes. 7/5/2022 Back to Vegetable picks |
