Fresh Okra with Indian Spices

Ingredients:
1 mid size Spanish onion
2 Lb. fresh okra
2 ea. Mid size tomatoes (chopped in cubes)
2 Tbsps. olive oil
1/2 Lb. organic ground round beef
1tsp. salt
1Tbsp. Tomato paste
 
Indian spice sauce:
1Tbsp. grated fresh turmeric
2 Tbsp. finely grated fresh ginger
2 ea. Finely grated garlic
1/2 C Fresh cilantro
1/2 Tsp. Cumin
Blend all in food processor
 
Making:
Wash the okras well
Peel the cap of the ea. Okra with a carving knife
Chop onion into small cubes
Heat olive oil in a wok,
Sautee onions until translucent on a medium heat
Add beef rounds keep sautéing few more minutes
Add Blended Indian spice mix
Sauté few minutes more until the aroma comes out
Mix in okras, close the lid and let it okra release its juice
Add tomatoes, mix
Bring the tomato paste in the 1/4 C of water to a liquid form
Add into the okras.
Simmer the okra meal until okras cooked well
 
Kitchen secrets: If you add 1/8 Tsp. baking soda while you are adding the okras
Okra would keep it green and vibrant color during and after cooking.
Serve as a hot meal with white rice pilaf.
