Cook2b’s Almond-Walnut Cake

Ingredients:

 3/4 C raw sugar
3 eggs (yolks and whites separated)
1/2 C olive oil
1 C almond flour
1/2 C grated walnut
1 1/4 C Unbleached flour (could be altered w/coconut flour 3/4C only)
1 C almond milk
1/4 C coconut cream powder
1/2 Tbsp. baking soda
1 Tbsp. vanilla powder
70 gr. dark chocolate
2 Tbsp. butter
1/2 Tbsp. cinnamon
 
Making:
 Prepare (measure) all ingredients, Separate eggs yolks and whites in different bowls, grate the walnut
In a mixing bowl bring together egg yolks, sugar and olive oil and mix with hand mixer.
Dissolve coconut cream powder in almond milk
Add into egg (egg+sugar+oil) mix and blend it together with the hand mixer.
Add Almond milk into egg mixture and mix with fork. 

Fold in almond flour, and walnut
Sift together; vanilla powder, baking soda and flour 
Incorporate flour mix into the egg mix set aside.

Beat the egg whites together in mixer with high speed. Egg whites should form soft peaks and fluffy looking.
 
Add egg whites in to a cake batter.
Spare 1/2 C cake batter in a small bowl

Transfer rest of the batter into the cake pan. Set aside.
Bring butter and chocolate together and melt them together mix with fork looking like chocolate sauce add cinnamon
Add chocolate cinnamon sauce by drizzling into the cake batter.
Bake the cake in 180C (350 F) for 45 minutes.
Cool down transfer in to serving dish.
This cake is very fluffy and very moist enjoy:)
You can melt extra dark chocolate in butter and decorate the cake after baked ( if desired)
