Fennel Salad
Ingredients :
4 Roots of fennel 1 C green olives (pitted and halved) 1/2 C feta cheese (crumbled) ¼ C dill (minced) ¼ C mint (minced) ½ C green onion (chopped small) 1 Tbsp. Basil 1 green chili pepper (chopped very small) 1/4 C cilantro (minced) 1/4 C capers 2 Tbsps. Olive oil 2 Tbsp. rice vinegar (lemon juice) 1/2 Tbsp. cumin seed 1/2 Tbsp. yellow mustard seed 1/2 Tbsp. red chili flakes Making: Wash the fennel roots. Take outer layers Divide each fennel 8 pieces Code with olive oil very lightly Broil until they cook (become soft) and slightly browned. Transfer into a flat service dish. In another bowl mix all green herbs, seasonings, capers and olives. Add olive oil and lemon and mix all well.
