Eggplant in Olive Oil

Grilled eggplant with garlic yogurt is one of the best side dish of summer dinners, or fried eggplant in the salads.

Sometime we do cook eggplant with round beef. They all beneficial for our health all very delicious

Today we add another way of cooking of the eggplant into our eggplant recipe collection.

It is extremely easy to make and can be used as aside dish for your steak nights or for your light lunches.

Ingredients:

5 middle size dark skin eggplant (washed and peeled in strip)

2 middle size yellow onion (thinly sliced)

2 tsps. Salt

1 Tbsp. honey

1 tsp. turmeric

1 head garlic (chopped rather big cubes)

2 hot green pepper (chopped in cubes)

2 middle size of tomatoes (chopped in cubes)

1/4 Cup Olive oil

1/4 Cup water

Making:

Heat the olive oil in casserole

Add onions and sauté until they get translucent

Add, salt, honey, turmeric, garlic, pepper, sauté few more minutes, until the seasoning aroma come out

Add eggplants, stir,

Stir in tomatoes and add water

Simmer for 25 minutes until eggplants gets soft and cooked.

This dish served cold.
