Egg in the Heart

This is basically a sunny side up breakfast topped with tomato sauce.
I saw these different shapes of cutters sold in the store specifically for this purpose and wanted to try.
For the record, these cutter are indeed made of stainless steel (not aluminum)

Ingredients:
2 eggs
1 tomato
1 green habanera pepper
1 small yellow onion
1/4-cup cilantro and parsley mix (minced)
Toasted bread
1 Tbsp. olive oil
1 tsp. black pepper
1 tsp. salt
Olives
25 g feta cheese ( 2 inch cube)

Making:
Wash the vegetables well
Slice the tomatoes
Chop the pepper
Slice the onion
Heat the oil in the flat non-stick pan.
Sauté the vegetables all at once (Do not over cook)
Make little space in the middle and place the heart shape cutter,
break the whole egg in the cutter
Whip the other egg with 1 Tbsp. mozzarella
Pour around the vegetables.
Simmer until eggs are set.
Transfer to the serving dish
Arrange with toasted bread, feta cheese and olives.

Garnish with cilantro and parsley
