Date Bars

Ingredients:
1 ½ C rolling oats
1/ ½ C unbleached flour
3/4 C brown sugar
3/4 C butter
1/4 tsp salt
3/4 tsp. baking soda
3/4 lb. pitted dates
1 C water
1/3 C brown sugar
1 tsp lemon juice
1/2 C Grind-ed pistachio
1/2 C thinly sliced almonds
 
Making:
In a sauce pan bring dates, water, sugar and lemon juice together and cook on medium heat until the dates cook to be able to mash it, let it cool down.
In a bowl mix oat, flour brown sugar and melted butter and mix all together
Add salt and baking soda.
Coat the bottom of 8X8 inch Pyrex pan with butter and dust with flour
Lay the ½ of the dough evenly at the bottom of the Pyrex.
Spread the mashed date filling on the dough evenly
Sprinkle all grind-ed pistachio on the date filling
Cover the date filling with the remainder dough.
Top the dough with sliced almonds
Bake in 350 F (180 C) for 25 Minutes.
Cut the cooled date bar sheet into small squares.
Serve with rose tea the best!
