Dandelion Chickpea Saute
This vegetarian meal is perfect for lunch, energizing and good protein source.
Ingredients: 2 Tbsp. Olive oil 1 big size onion (diced) 1 Tbsp. tomato paste (or 1/4 C pureed tomato) 2 bunches dandelion leaves (makes chopped 5 C) 1 C cooked chickpeas 1/2 Tbsp. brown sugar** 1 Tsp. salt 1 tsp. paprika 3/4 C water Making: Wash dandelions very well. Chop in small pieces Sautee diced onion until they became translucent Add salt, paprika, sugar, tomato paste and dandelions mix slightly Simmer lid closed for 10 minutes. Greens get softer and easy to mix. Add chickpeas and mix everything well this time. Add water Let it cook on medium to low heat for 20 minutes. Serve immediately. Ps. serve as a side dish also next to steak, salmon or chicken meal. ** Dandelion is a bitter green. It is very beneficial for digestion and immune system, however since it is bitter I found the way to break bitterness by adding little brown sugar and little tomato. 4/2/2018 Back to Vegetable Page |
