Cooking Salmon Fillets in Green Olive Tomato Sauce

Ingredients:
2 Salmon fillets
2 Slice of toasted bread spread butter garlic


For the sauce:
2 Medium tomatoes (grated)
1 big Spanish onion (Chop irregularly)
1 chili red pepper
1 Tbsp. dried (or minced fresh) Basil
1 tsp. thyme
1 Tbsp. olive oil
2 tsp. Turmeric
3/4 C pickled green olives (chopped)
1/4 C cilantro (chopped)
1 tsp. salt
1 tsp. black pepper

For the vegetable:
1/4 C chopped onion
1 C chopped Spinach
1/2 C pea pods
1/2 Tbsp. olive oil
2 tsps. Freshly grated peppercorn

Making:
Wash and pat dry the Salmon fillets and set aside.


Sauté onions in olive oil until they get translucent


Add tomato and chili pepper


Bring the heat down and Let it cook about 15 minutes.

Add basil, thyme, turmeric, salt, pepper and olives


Simmer for another five minutes.


Place two fillets in the sauce close the lid keep simmering and let the salmon cook for 20 minutes


In the mean time prepare the vegetables,


Sauté onion in olive oil, add pea-pods and spinach
(Don’t let the green color of vegetables turn to brown)
Lightly salt and add peppercorn



Keep it warm
When Salmon cooked Serve garnishing with minced cilantro and with side vegetables.
