Cook2b's Easter Egg
Ingredients:
9 eggs 1/3 C diced onion 1/3 C yellow/red pepper diced 1/3 C frozen green peas 3 1/2 C shredded medium sharp cheddar cheese 2 C whole milk 2 1/2 Cups hash brown (or diced potato) 1 Tsp. salt 1 Tsp. black pepper 1 Tsp. Paprika Making Preheat oven 350 F (180 C) Separate egg whites in a bowl set aside. Yolks in to another bowl Add onion, green peas, peppers, milk, cheese and milk Mix gently Add salt and pepper and a little paprika Whip egg whites until mixture becomes really foamy, fluffy. Fold in foamy egg white in to egg yolk mixture, blend well. Grease the bottom of 15 X 10 Pyrex baking dish Pour the egg mixture in Slightly cover the dish with aluminum foil Remove the foil in last 15 minutes. Bake 1 hr.
