And has significant amount of Potassium Indeed many more health benefits that I could tell in the further recipes that I am sure I will put in my food collection. Pancakes are very well known popular breakfast items. The difference in this recipe is that I reduced the amount of flour mix instead used more bananas. I used coconut oil, and almond milk to make the syrupy batter. Also only a tsp. of coconut oil was enough to pan fry the all petites. Natural maple syrup, fresh strawberries and cut mango made the good companion to the soft little petites. Preparation time: 10 min. Cooking time: 20 min. Ingredients: 1 Cup almond milk (or 2% milk) 5 mashed banana (definitely not too ripe, greener rather) 1 egg 3/4 Cup pancake mix 1/4 Cup coconut flour 1 Tbsp. coconut oil (in the batter) 1 Tbsp. coconut oil (to pan fry) 1 tsp. baking powder Preparation: Smash banana well with fork in a bowl Add milk and mix well with banana together Whip the egg in a separate bowl and add into banana/milk mixture. Add coconut oil Add pancake mix followed by coconut flour After you add the pancake mix be very gentle to mix. Just do gentle strokes to the lumps of flour to brake. Do not use any type of mixer. The batter must be not too runny but really smooth. If you want equal sizes of pancake use a service spoon to pour in oiled hot griddle. Keep the heat medium Fry 2 times 3 minutes each side.
