Chuck Roast French Onion

Ingredients:
Chuck roast:

2 Lb Chuck roast washed well pat dried and sliced as it seen on the photo)

4 small red onions (shallots)

1 Tbsp. Thyme

1 Tbsp. Grounded peppercorn

1 Tomato

Onion Sauce:

2 Big red Onions

2Tbsps. olive oil

2 Tbsps. Brown sugar

2Tbsps. pepper paste

1/4 C cooked tomato

1/2 C red wine

2 tsps. Salt

2 tsps. Turmeric

1 clove minced garlic

1 Red chili pepper

1 1/2 C beef broth (or water)

1/2 Tbsp. Thyme (fresh is better)

For bread:

4 slices wheat bread

2/3 C shredded mozzarella cheese

Making:

Sear both sides of the chuck-roast slices for 2 minutes in 1 Tbsp. olive oil until nice brown

Place them in a clay pot

Cut each shallot in four pieces and put on the meat

Slice one tomato and cover the meat

Add 1/4 C warm water

Bake it in 250 F for about 2 ½ hours.

On the other hand

Sautee sliced onions in 2Tbsp. olive oil until they get translucent.

Stir in brown sugar

Add cooked tomato

Add pepper paste, salt, turmeric, red chili pepper and garlic.

Stir in wine, and add water, (or broth)

Simmer until the whole fluid level comes half way from the beginning.

Divide shredded cheese and place each part on a slice of bread.

Grill the bread until cheese gets bubbly

Place the bread slice in the onion sauce

Place one slice of baked chuck roast on the grilled bread. (Repeat the process for the other slices)

Garnish with cilantro and grated Parmesan cheese

Serve immediately.
