Chuck Roast Chili

Chuck Roast Chili
4 Lb. Beef Chuck Roast (fat trimmed and chopped in cubes)
1 Spanish onion (or 2 small yellow onion)
2 Tbsp. olive oil to sauté the beef.
2tsp. kosher salt
1 Cup homemade tomato puree
2 garlic cloves
2 Big (or 4 small) tomatoes
1 Tbsp. grounded cumin
1tsp. coriander
1tsp. turmeric
2Tbsp flour
1 Tbsp. chili pepper
1 tsp. chipotle pepper
5 tomatillos
2 Jalapeno peppers
1/2 Tbsp. pepper paste
4 Cups beef broth
1/2 C chopped cilantro
1 lemon wedges
A spoon of yogurt (or sour cream) for each served dish.
Making:
In the food processor, add altogether tomatoes, cumin, coriander, turmeric, flour, chili pepper, chipotle pepper, pepper paste crush and mix all ingredients with couple pulse. Set aside
Again, in the food processor add following items jalapeno peppers, tomatillos, garlic cloves crush them with a few pulses and set aside
Also dice the onion in a food processor or manually.
Bring together in a pressure cook onion with salt and sauté until onions becomes translucent , add meat cubes and keep sautéing until meat sears a little.
Add tomatillo mix, keep stirring a few more minutes.
Add tomato mix, mix altogether
Add beef broth
Close the lid and cook 30 minutes according to direction of the pressor cook.

PS. You can cook this meal in a Dutch (simmer during cooking time about an hour until meat is tender) oven or in slow cooker (8 hr.)
When serving time garnish with yogurt ( or sour cream) cilantro, lemon wedges or a slice of avocado, according to your desire.
