Chuck Roast cooked in slow cooker in wine
Ingredients:
Olive oil 2.5 lbs chuck roast whole 1/2 cup seasoning Thyme leaf 1 cup beef broth 1/3 C wine 2 Tbsp corn starch Making: Rinse and pat dry the meat Coat generously with olive oil Coat with stake seasoning all over the meat generously Heat the iron skillet Place the meat and sear all sides 2 minutes each side. Replace the meat in to the slow cooker Heat C of beef broth Scrap the burned seasoning from the bottom of the skillet Pour the beef broth and simmer for 1 minute Transfer the broth on to the meat in the slow cooker. Select high 4 hours. (preferably in low for 7 hrs. would be more efficient cooking) After four hr. dissolve the corn starch in wine Pour on the meat and keep cooking another 45 minutes to an hr. If desired carrots and potatoes can be added during the last hr . However, I roasted vegetables separately and served next to meat along with white rice. Back to the red meat selections |
