Avocado-Choclate Muffins
Ingredients
2 eggs 1/2 C Sour cream (or yogurt) 1/2 avocado 1/4 C apple sauce 1/2 C almond milk 2 Tbsp. coconut oil 1 scoop collagen powder 1 slice white bread 1 C flour 1 /4 C Cocoa powder 1/2 C Dark chocolate chips 1 tsp. baking powder 1/4 C raw sugar Making: Combine first eight ingredients in the food processor (melt the coconut oil slightly before adding in to processor.) Give a few pulses until all ingredients mixes well become like a pudding texture. Combine all dry ingredients in to a big mixing bow and mix in together. Pour liquid part into the dry part and mix in with gentle strokes. Transfer into the muffin pan Bake at 350 F for 15 Minutes November 20 2020 back to baking kitchen page |
