Chocolate Chip orange cake

Ingredients
3 eggs (white and yolks separated in to two different bowls)
1/2 C sugar
1/2 C yogurt
1/2 C avocado oil
1tsp. vanilla
1/2 C chocolate chips
2 oranges (one for the cake one for the syrup)-prepare by squeezing the juice and get the rind through fines grader.)
1 Tbsp. baking powder
1 3/4 C sifted flour
Regular size cake pan coated with a layer of butter and flour.



Making:
Set the oven for 355 F(180C)
In another bowl whisk egg whites until it becomes solid and fluffy. Set aside
Whisk yolks and the sugar until mixture becomes creamy.
Add, yogurt, oil, orange juice, orange rinds and the chocolate chips into a creamy yolk sugar mixture one by one and mix by folding with spatula.
Add sifted flour and baking powder mixture mix by folding.
Finally add solid form of whipped egg whites and bring the whole combination to a smooth creamy dough.
Pour into a prepared pan and bake in 355 F for 35 to 40 min.
In the mean time prepare the syrup. (Mixing one orange juice with the pulp and 1/4 C raw sugar (could be coconut sugar too) in a sauce pan on the medium heat, one the sugar dissolve and as soon as boil. Take it off the heat, drain it. And let it cool down.
During the time do NOT open the oven door.
Check the cake with a toothpick or a cake wire -it should come out clean -sticky-
Cake should be able to come out of the pan fairly easy.
Place the cake on a rack. Pour the orange syrup spoon by spoon, making sure each spoon of syrup is absorbed into the cake.
Serve with blueberries.
