Chcikpea Penne Pasta w/ Chicken
Ingredients:
8 oz. Chickpea Pasta (penne) One half chicken breast and tie cut stew type 3 Tbsps. olive oil 2 small yellow onion (diced) 1/2 Green Bell pepper (diced) 1 red bell pepper (diced) 1/4 C minced fresh Basil 1/2 C chopped parsley 6 each cherry tomato (halved) 1 tsp. salt 1tsp. grounded black pepper 1 tsp. turmeric 1/2 tsp. ginger powder 1/2 tsp. coriander powder 1/2 tsp. red pepper flakes 1/2 C chicken broth 1/2 C Parmesan cheese Making: Boil water in deep pan Add little salt and olive oil Toss pasta in and cook until little softer than al dente Rinse and set a side In large rather deep sauté pan, sauté onion until translucent, add diced green and red bell peppers. Add chicken pieces and continue sautéing until chicken gets tender. Add salt, pepper, turmeric, coriander, ginger powder and pepper flakes. Add 1/2 C chicken broth and simmer for 10 minutes. Toss cooked pasta into the chicken sauté Add chopped parsley Toss and turn the whole pasta couple time to mix pasta with chicken.
