Cabbage Rolls
Once my most ignored dish became my favorite meal with the addition of few herbs and spices not to mention many good reasons to eat cabbage. Let me tell you only one of them. Because of having three types of nutrients (antioxidant richness, anti-inflammatory richness, and containing glucosinolates) cabbage is a very effective cancer preventative. Enjoy making Cabbage rolls and enjoy more eating it! Ingredients. A head of cabbage 1 Lb. lean beef ground round 1/2 cup white rice 1 small tomato 1 middle size yellow onion 2 garlic cloves 1/4 cup minced parsley 1/4 cup minced cilantro 2 small red chili pepper 1 Tbsp. pepper paste 1 tsp. ground black pepper 1/2 Tbsp. salt 1 Tbsp. olive oil 1 tsp. turmeric 1 tsp. cumin 1 tsp. grounded chipotle chili powder 2 Tbsp. tomato paste 1 ¾ cup water Making: Fill the deep boiling pan half full with water and bring to the boiling point Wash the head of cabbage and dig the middle part out with help of the knife Place the whole cabbage in boiling water carefully add put 3 Tbsps. salt in the hole in the middle Let the cabbage cook on the medium heat for 15 minutes. Take the cooked and separated leaves out one by one with the help of a fork until you reach to the core. In a food processor combine chopped onion, garlic, chopped tomato, chili pepper, salt and black pepper, pepper paste, parsley and cilantro. Process it for couple minutes. In a glass bowl combine ground round, rice and the grinded onion mix Mix this meat filling well. Place 2 Tbsp. meat filling in each cabbage leaf and wrap it tightly as it shown on the picture. In a medium pan you will end up having 2 layers. If you have a bigger cabbage and more filling, you can stack up to the three levels cabbage rolls. In a little bowl, combine, tomato paste, turmeric, cumin, chipotle pepper Add 1 ¾ cup of water and mixed it well until tomato paste dissolves. Cover the cabbage rolls with flipped over flat dining dish. Drizzle the tomato sauce around the plate carefully. Place some weight on the dish. (It can be water filled soup ball) close the lid and cook the rolls simmering for 30 minutes. Cabbage rolls maybe accompanied with white sauce penne as well as garnished with garlic yogurt if desired. back to Beef Selections |
