Broiled Salmon with sweet potato puree and sauteed Leeks

Ingredients: serving for 2

For salmon preparations:
1 Lb. salmon fliiet
1/2 of small red onion
1/2 Lemon (sliced_
1 stalk fresh onion
1Tbsp, small chopped cilantro
1 Tbsp. breadcrumbs
1tsp. red pepper flakes
1Tbsp. lime fish seasoning (Chili pepper, onion powder, coriander powder, black pepper)
1Tsp. (preferably fresh rosemary)
Sweet potato puree
3 midsize sweet potato
2 Tbsp. salted butter
Freshly grind ed peppercorn
Salt
 Leek Saute
Two stalks of leek
1Tbsp. garlic pepper paste
T Tbsp. tomato sauce
1 tsp. turmeric
1 Tbsp.  chili pepper lime seasoning (same combination that I used for the fish)
2 Tbsp. Olive oil.
Salt

 Making:
Step 1- Boil the potatoes, peel and  mash with butter, pepper and salt. Set aside. (Use 1/2 C per serving)

Step 2- Rinse the leeks very well separating the leaves from each other.
Chop into very thin slices
Heat the oil in a large shallow pen.
Add the chopped leeks.
Add all rest of the seasoning ingredients and tomato sauce. Saute on medium heat for 5 minutes.
Close the lid and cook on light heat for 15 more minutes. Set aside.
Use 1/2 C per serving.

Step 3- Rinse the salmon fillet, tap dry with paper towel.
Lay a cooking sheet in the broiling tray
Brush both side of the salmon fillet with olive oil thoroughly.
Sprinkle salt very lightly
Sprinkle seasoning, rosemary and red pepper flakes evenly.
Sprinkle bread crumbs
Break the fresh onion a few pieces toss on the fish
place few thin slices of red onion and cilantro
finally place the lemon slices
Place three 1/2 Tsp. butter on the fish. (just drop the butter on different places on the surface0
Bake in 375 F for 10 minutes covered with foil.
Then after bring the oven Broiling and take off the foil
Broil the fish for another 5 Minutes.
Ps. I avoid cooking fish too long because it may get dry , so if you want you can always bake few more minutes.
