Breaded Egg Muffins
Ingredients for 12 muffins 2 Slice of bread (preferably whole grain) chopped in small cubes 2 eggs 1/2 C feta cheese (crumbled) 1/2 C cheddar-mozzarella cheese mix (shredded) 1/2 C chopped kale 1 Tbsp. milk 1 tsp. grated peppercorn 6 each cherry tomatoes Making: Adjust the oven 400 F Cut the bread into small cubes spread olive oil code in to the muffin wells. Place 4 little cubes of bread into each well Spread cheddar cheese on the bread pieces equally in to each well Add the kale pieces again equally on the cheddar Whisk the eggs in a small bowl add feta cheese crumbles and milk mix it well, Pour in to each well carefully and equally Sprinkle a peppercorn Decorate each well placing a half cherry tomato on each muffin mix.
