Banana Chocolate Cake
Ingredients:
Two eggs (white and yolks separated) 1/2 C avocado oil + 2 Tbsp coconut oil 1/2 C sugar (for egg yolks to whip) 1Tbsp (for egg whites to be whipped) 1/4 C plain yogurt 2 ripe bananas (mashed) 2 Tbsp. apple sauce (sugar free) 1 Tbsp. vanilla 1 Tbsp. baking powder 1/2 C flour + 1/3 C almond flour (combined) Mix 1/4 C brandy + 1/4 C water set aside For the sauce 1/2 C dark chocolate chips 1/4 C milk 1 Tbsp. coconut oil Melted in chocolate warmer till it becomes creamy and pour-able. Making: Oven set for 355F Whip egg yolks and sugar until mixture becomes creamy Add, yogurt and oil combination give it a whip once to mix all Add mashed banana and by folding mix using fork after this point Add vanilla Add flours, coco powder and baking powder little bit at a time through strainer. Add Apple sauce mix it once. Set a side Whip egg whites and 1 Tbsp. sugar with high speed of mixer until it becomes solid white and fluffy. Add fluffy egg whites’ spoon by spoon and mix in cake batter by folding gently. Pour the cake batter into 5 X 8 bread pan. Bake 35 min. (355F) . Check if cake baked after 35v minutes. If tooth pick come out clean take the cake out of the oven. Brush the cake (brandy water mix) while it is warm to absorb all liquid Pour over chocolate syrup.
