Avocado-Blueberry Muffins
Ingredients: 1 ripe avocado 1/3 C brown sugar 1 egg 1 Tbsp. baking powder 1 Tbsp. vanilla 1/2 C yogurt 1/4 C milk 1 ½ C flour 3/4 C Frozen blueberry Making: Bring avocado, sugar and egg together in food processor and mix altogether with dull blades. Add yogurt, mil, vanilla give a quick pulse. Transfer the mixture into a large bowl. Sift flour and baking powder into the mixture Mix all together gently Fold in blueberries very gently Pour the batter into the muffin pan Bake in 400 F for 20 minutes.
