Almond paste filled Christmas cookies
Ingredients 2 C flour 1/2 C light brown sugar 1/2 room temperature softened butter 2 eggs 1Tbsp. vanilla 85 gr. (little less than ½ C) Semi sweet dark chocolate chips ( I prefer unsweetened dark chocolate chips) 1 Tbsp dark cocoa powder 3/4 cup marzipan (almond paste) diced. Making Put the chocolate chips in a warmer and let it melt slowly. Cream the sugar with butter in a bowl until it gets fluffy Add liquid vanilla Add eggs and beat well. (I did manually with hand mixer) Sift the flour into egg and butter mixture and form a soft cookie dough Divide the dough in a half. Save the other half aside. Add melted chocolate into one half of the dough Add cocoa powder Knead the dough until all mixed well. Take walnut size of the dough roll in your palm and press like 4-inch diameter circle Place two pieces diced almond paste and roll the dough forming a ball. Place on cookie sheet. Repeat the process until all dough finishes. Add 2 more Tbsp. of vanilla and 1 Tbsp flour in the half of the dough mix well. Again, take walnut sizes of white dough and fill with couple pieces of almond paste and roll back on like ball shape. Place all cookies on the cookie sheet Cover slightly with foil and chill for 30 min. Bake the cookies in 375 F for 15 minutes. Transfer the cookies on to rack.
