Orange/Almond Gluten Free Bundt Cake

 Ingredients:
4 Eggs
1/4 C Raw Sugar
2 oranges (skin is completely grated and rest of the fruit blended)
1 C organic unbleached wheat flour
1 C almond flour
1/3 C gluten free (wheat free) flour
1 Tbsp. powdered vanilla
1 Tbsp. aluminum free baking powder
1/3 C olive oil
1/3 C dark chocolate chips
 
 Making:
 Prepare the cake mold by brushing melted butter followed by coating with flour
Set the oven 350 F (180C)
Bring eggs and sugar in a mixing bowl
Rub the oranges with baking soda and rinse them
Grate the rind into a bowl
Blend the rest of the fruit to a thick juice
Bring all wet ingredients together in a bowl.
Bring all dry ingredients in another bowl.
Whip the eggs with sugar until it becomes foamy and creamy
Mix in wet ingredients (oil, orange rinds and orange juice)
Fold in dry ingredients until just about all ingredients mixed together.
**** Mixing the cake batter too long and fast may cause not rising!
Add Chocolate chips mix couple times
Pour into a cake pan
Bake 45 minutes with keeping the oven door closed all the time.
***Opening the oven door during baking may cause cake not rising properly
