Almond Butter Double Chocolate Cookies
Ingredients:
1 ¾ C unbleached Baking flour 1/2 C unsalted butter 1/2 C almond Butter 1/4 C sugar 1/4 Brown sugar 1 egg 1/3 C milk 2 tsp. vanilla 1 tsp. baking soda 1/2 tsp. salt Filling and Topping: 1 package cream cheese 1 ½ C semisweet dark chocolate chips 4 Tbsps. milk 1/2 C walnut 1/4 C almond 1 Tbsp. hazelnut Making: Bring the almond butter and the egg to room temperature. When they get warm mix in together with fork until it gets smooth Add milk and keep mixing Add both crystallized and brown sugars mix altogether Add flour, baking soda, vanilla and salt All mix together and bring up to a soft and easy to handle dough Place the dough in the refrigerator for 15 minutes. Set the oven for 350 F Roll the dough ½ mm tick and cut small cookies using 2 inches diameter cookie cutter. Place them on a cookie sheet Bake the cookies for 13 to 15 min. Replace the cookies on to the rack right away. Making the filling and topping, Filling: Bring the cream cheese out of the refrigerator to warm up Melt the 3/4 C chocolate in 2 Tbsp. milk in the microwave Mix together and make it creamy in a bowl. Topping: Melt the rest of the chocolate in 2 Tbsps. of milk Mix it well to smooth creamy mixture. Blend all nuts together in food processor Paste two cookies together with cream cheese/chocolate filling Top the cookie with chocolate cream Sprinkle coarse nuts mix.
